Grown in cages in a shallow sandy bottom cove that is shared with a state park. They are tumbled regularly which develops a deep cup and large firm meat. Sweet Jesus and Hollywood are medium brine sweet oysters; they have a merroir of subtle minerality, and a distinctive nutty finish that brings out the best of the oyster.
